We are a home based Micro-bakery specializing in Wild Yeast Sourdough baked goods: Artisan loaves, pita, English muffins, crackers and croutons.
Hello! My name is Noelle. We opened our cottage bakery in Auburn, CA in October 2019. Notice I say “We!” My ever patient husband, Dave, has been along with me on this surprising adventure.
I received my first sourdough starter (that I named Warren) from a friend, as a bit of an experimental lark. Little did I know at the time that the sourdough bug would bite! From the beginning, I was surprised that even the mediocre loaves that I was turning out were remarkably tasty. This rabbit hole was deep, and I needed to know more about the fascinating art of baking with wild yeast.
This passion eventually lead to me opening my own business. Now Warren & Co is proud to have wonderful relationships with many local merchants and restaurants.
Our Sourdough Starters
- “Warren”- My first starter was a gift from a friend. I had no idea what the heck I was doing! Poor Warren was put through quite a few hardships in the beginning. He is such a wonderfully consistent and dependable performer.
- “Floki”- From Iceland! On a business trip to Iceland a few years ago, I stopped by Braud Bakery and was thrilled when they gifted me a bit of their starter. Floki has a wonderful bit of sass and a lovely, robust Viking spirit!
- “Mr. T”- A friend, who is a fellow sourdough enthusiast, and lives in Malaysia, sent me some of her starter. Mr. T is originally from the Tivoli Road Bakery in Australia!
- “Rosie”- She has a very sweet spot in my heart. I made Rosie in April 2020, during our Covid shelter-in-place. After hearing from so many people that it was getting impossible to buy bread, I did a Facebook Live with the community to create a sourdough starter together. I named her Rosie after Rosie the Riveter, because we can get through all things together. I now sell Rosie as a dehydrated starter, so we can all share her robust can-do spirit.
Hence the name of my company, Warren & Co. Sourdough. I would be nothing without my trusty sourdough companions.
Our Commitment
When your product is only three ingredients (flour, water and salt), they had better be the absolute best! It is our commitment to use only the finest ingredients available. The flavor and texture rely on it, as well as the nutrition.
All of the flour we use is organic and stone-milled. We are very lucky to live in an area where we can easily acquire flour that has been milled in the most conscientious fashion–that maintains the integrity of the flour and its nutrition. And importantly, the land is responsibly farmed and the farmer makes a fair wage.
- Early Bird Farm and Mill is our local small miller, located in Calaveras County. All of the grain that they mill is grown within 50 miles of us! Unbelievable! The farms grow heritage varieties that are very flavorful and are indigenous to our climate. They mill the flour as we need it, so it is always the most flavorful, nutritious flour.
- Central Milling Flour is just a hop over to Petaluma! They have an extensive variety of organic flours, their heirloom varieties are amazing. We run over there once a month to bring home 700 lbs of flour! Wow!
